I don't know what you mean "keep them hidden....". You place the GA code in your template's code. It's not visible to the visitor unless they go digging around using "View Source" in their browser.
HTML is plain, text, not encrypted. The only thing for GA you add is the site's UA-XXXXXXX code. There are plugins to help you insert the codes. https://extensions.joomla.org/instant-s ... 0analytics
If you are in the EU, you have to disclose (by law) the fact you using Google Analytics (or anything using cookies). Any other country with similar privacy laws would require the same thing.
